Woolgrower's Basque Vegetable Soup

Simple, hearty, and made to be shared, this traditional Basque-style vegetable soup is the kind of recipe that fills the kitchen with warmth. 

Ingredients
1 head cabbage
3 leeks
4 carrots
3 potatoes
1 onion
2 fresh tomatoes
1 zucchini
1 8-ounce can tomato paste
1 teaspoon chicken-flavor bouillon
Salt and pepper, to taste
Additional vegetables, as desired

Instructions
Fill a 7-quart Simmer Down Dutch Oven with water.

Add the vegetables, tomato paste, and bouillon. Bring to a boil.

Cover, reduce heat to a gentle simmer, and cook slowly for about 2 hours, until the vegetables are tender and the broth is flavorful.

Season to taste.

Serve hot with French bread baked in a 5-quart Simmer Down Dutch Oven.
