Ruby's Chinese Fried Rice

.A classic Chinese fried rice recipe with shrimp, chicken, ham, eggs, peas, and rich soy sauce flavor.

Ingredients

  • 1 cup long-grain rice, cooked one day ahead and chilled
  • 3 green onions, finely chopped
  • 1/2 cup diced ham or pork
  • 1/2 cup shrimp, chopped
  • 1/2 cup raw chicken breast, diced small
  • 5 fresh mushrooms, chopped
  • 4 eggs
  • 1 cup frozen peas
  • 2 tablespoons high-heat cooking oil, plus more as needed
  • Dark soy sauce, to taste and color
  • Dash of salt

Instructions

Prepare the Rice

Cook the long-grain rice one day ahead of time and refrigerate overnight. Cold rice fries better and stays light and separate.

Prepare the Ingredients

Finely chop the green onions, ham, shrimp, chicken, and mushrooms into small pieces for the best texture and even cooking.

Cook each ingredient separately in the Dutch oven over medium-high heat, adding a small amount of oil before each ingredient. Remove each cooked ingredient and set aside in separate bowls near the stove.

Cook the Eggs

Crack the eggs into the Dutch oven and cook slowly, gently breaking the yolks as they cook. Once fully cooked, chop into small pieces and set aside.

Cook the Peas

Heat a small amount of oil in the Dutch oven until very hot. Add the peas with a small dash of salt and cook quickly, stirring constantly, just until bright green and tender. Remove immediately to keep their fresh color.

Fry the Rice

Wipe the Dutch oven clean if needed. Heat 2 tablespoons of oil over medium-high heat.

Add the chilled rice and gently break it apart with a wooden spoon while stirring. Keep the rice soft and fluffy as it cooks.

Add dark soy sauce a little at a time until the rice reaches a rich golden-brown color. Season lightly with salt.

Combine Everything

Return the cooked ham, shrimp, chicken, mushrooms, eggs, peas, and green onions to the Dutch oven a little at a time, stirring gently after each addition.

Mix thoroughly until evenly combined and heated through. Add additional soy sauce if needed.

Serve hot and enjoy!
